Elderberry Ice Cream Sandwiches

Gone are the days when you had to buy an expensive ice cream machine to have decadent ice cream. With only a hand full of ingredients and about 10 minutes working time you can have yourself an ice cream party! Customize whatever flavor you desire with easy mix ins and different flavorings. Craving mint chocolate chip? Just add 1/2 teaspoon mint extract and 1/2 cup chocolate chips. What about cookies-n-cream- just crush up some chocolate sandwich cookies and throw them in the mix! Its really that simple 🌟 

 

 

No-Churn Elderberry Ice cream 

Ingredients:

1 (14 ounce) can sweetened condensed milk 

2 teaspoon vanilla extract

Pinch salt

2 cups heavy cream chilled 

1 tablespoon Göod Berry Co. Elderberry Syrup 

*add whatever mix-ins you like. Chocolate chips, marshmallows, sprinkles etc. 

Instructions:

1.) In a medium bowl mix the sweetened condensed milk, vanilla extract and salt. Stir until combined. 

2.) Using a stand mixer attached with the whisk attachment, mix the heavy cream on medium-high speed to stiff peaks about 3-4 minutes. 

3.) Spoon a third of the whipped cream into the sweetened condensed milk mix to lighten it. Then fold in remaining whipped cream. Being careful to not deflate the whipped cream too much. 

4.) In a shallow freezer safe pan lined with plastic wrap, spoon mixture into pan and smooth into an even layer. Freeze 6 hours or overnight. 

5.) Once frozen, invert pan onto a cutting board and peel away plastic wrap. Using a cookie cutter in the desired shape and size, cut out ice cream the same way you would cookies. Place ice cream cut outs on a plastic wrap lined pan and put back into freezer. 

Shortbread Cookies

Ingredients:

1 cup unsalted butter or vegan butter substitute (softened)

1/2 cup Swerve powdered sugar

1 teaspoon vanilla extract

1/2 teaspoon salt

2 cups flour **for chocolate cookies, remove 1/4 cup flour and replace with 1/4 cup cocoa powder**

1.) In a medium bowl, using a hand mixer or stand mixer, cream the sugar, butter, salt and vanilla extract together until smooth. Add the flour 1/2 cup at a time and mix on low speed until just combined. Cookie dough will be very soft. 

2.) Using a spatula, place dough onto your work surface lined with plastic wrap. Place another piece of plastic wrap on top of cookie dough.

3.) With a rolling pin, roll out dough to 1/4 inch thickness. Remove top layer of plastic wrap. Then, using your desired shape and size cookie cutter, cut out cookies. Place cookies onto silpat or parchment paper lined baking sheet using an offset spatula. Place pan in refrigerator for 15 minutes while you preheat the oven.

4.) Bake cookies at 350F for 10 minutes. Cookies should appear pale. Take baking sheet from the oven and let cookies cool completely on baking sheet. Once cooled place cookies in freezer to chill.

Assembly:

Remove frozen cookies and ice cream from freezer. Place an ice cream round onto a cookie with the bottom side up. Then top with another cookie. Dip in chocolate, roll in sprinkles, nuts, mini chocolate chips. Whatever you desire!! Enjoy!
