No-Bake Protein Energy Balls with Elderberry & LifeBar Maca Protein

Do you ever have those days where you are so busy that you forget to eat? And then 3pm rolls around and you are starving! So you reach for whatever you can find and most times it's not the best for you. Well I have the solution and its a yummy one👏🏻No-Bake Protein Energy Balls to the rescue!

I have been obsessed with LifeBars Chocomaca and Banillamaca Organic Plant  Protein Powders. I have a dairy allergy so its sometimes hard for me to find a protein powder that not only tastes good but is whey free. I love the flavor of LifeBar's protein powders and knowing they are organic and filled with super healthy ingredients like hemp hearts, pea protein and maca I know I'm fueling my body in a smart way! Their protein powders are great in protein smoothies with frozen banana and plant based milk but I also wanted to create something that I could keep in the fridge and snack on throughout the day for an energy and protein boost. As a busy mompreneur I need convenience! And of course I added our elderberry syrup into the mix so I get my immune boost too, Yay! 

The flavor combinations you can make are endless, so I made an Oatmeal Raisin and an Espresso Chocolate Chip. Something for everyone! The Espresso Chocolate Chip is Oat Free and both are gluten free, dairy free and egg free. I do use almond butter but if you have a nut allergy you could use sunflower butter. I hope you give them a try- they are truly delicious! 😋

 

Oatmeal Raisin Banillamaca Protein Balls 

Makes 12 balls with 4 grams protein each

1 cup oats

1/4 ground flax seed

1 teaspoon cinnamon

3 tablespoons LifeBar Banillamaca Plant Protein

1 tablespoon elderberry syrup 

1/4 honey or agave

1/2 cup almond butter

1/2 teaspoon vanilla 

Pinch salt 

1/3 cup raisins 

Combine dry ingredients in a medium bowl and stir to combine. Add honey, elderberry syrup, almond butter and vanilla extract. Stir until fully incorporated, then stir in raisins. Using a spoon or small cookie scoop, roll into 12 evenly sized balls. Store in the refrigerator in an airtight container or sealed baggy. 

 

Espresso Chocolate Chip Chocomaca Protein Balls 

Makes 9 balls with 5 grams protein each 

2 tablespoon almond meal flour

1/4 cup ground flax seed

 3 tablespoons LifeBar Chocomaca plant protein powder

2 tablespoons cocoa powder

1/2 teaspoon espresso powder

1/2 cup almond butter

1/4 cup honey or agave

1 teaspoon elderberry syrup

1/2 teaspoon vanilla

Pinch salt

1/3 cup chocolate chips ( I used Lily's Dark Chocolate Chips)

Combine dry ingredients in a medium bowl and stir to combine. Add honey, elderberry syrup, almond butter and vanilla extract. Stir until fully incorporated, then stir in chocolate chips. Using a spoon or small cookie scoop, roll into 9 evenly sized balls. Store in the refrigerator in an airtight container or sealed baggy.
