Overnight Oatmeal with Almond Butter & Elderberry Jam

I'm all about saving time in the morning. A filing, nutritious and delicious breakfast made the night before and one that can be made for a crowd is even better! I recently jumped on the overnight oatmeal band wagon and I gotta say its awesome! There are so many yummy flavor combinations you can do. We did a twist on a classic PBJ with almond butter and homemade elderberry jam. A drizzle of elderberry syrup on top would be heavenly and can replace any added sugar you may want to add. 

 

Ingredients: 

1/2 cup old fashioned oatmeal (not instant)

1/2 cup almond milk 

1/2 cup water

dash salt

2 tablespoons almond butter

2 tablespoons jam your choice, we used elderberry jam 

1 teaspoon chia seeds

In a small bowl combine oats, almond milk, water, salt and chia seeds, stir to combine. Add half of oat mixture to your vessel of choice. (We used an 8oz mason jar) Spoon jam on top of oats, then add almond butter on top of jam. Top with remaining oat mix and place lid on top. 

Store in the refrigerator at least 4 hours or overnight. Top with berries and elderberry syrup. Enjoy! 

Double, triple or quadruple recipe as needed.
