Pink Ombré Elderberry Pancakes

I'm sure you have seen those amazing bright pink, purple and blue smoothie bowls all over instagram. I wanted to try out these fun natural food colorings from a company called Raw Nice. Based in Sweden they have a line of natural food coloring powders made from fruits and veggies! I decided to try out the Beet Root Powder and make some deliciously pink pancakes. They are almost too pretty to eat (almost) 😉

 

Ingredients:

1 1/2 cup flour

1 teaspoon salt

3 tablespoons butter, butter substitute or coconut oil

1 tablespoon sugar ( I used monk fruit)

1 cup plant milk or milk of choice

1 egg or 1 egg equivalent of choice (Ener-G egg replacer is great)

3 1/4 teaspoons baking powder

1 teaspoon vanilla extract

1 teaspoon cinnamon (optional)

Topping: 

1/4 cup Soy Milk Heavy Cream Substitute or Heavy Cream 

1/2 teaspoon Raw Nice Beet Root Powder

2 tablespoons Göod Berry Co. Elderberry Syrup 

Maple Syrup

Berries or fruit of choice 

Instructions: 

1.) In a large bowl combine flour, sugar, salt, cinnamon and baking powder, stir with a whisk to combine. Set aside.

2.) In a small microwave safe bowl melt the butter, about 20-30 seconds.

3.) Next, make a well in the flour bowl and add the egg, milk, melted butter and vanilla, stir just until combined.

4.) Measure 1/4 cup batter into a small bowl and add 1/4 teaspoon Raw Nice Beet Root Powder, stir to combine. Pour into buttered medium hot skillet. Flip after 30 second. Place on plate once fully cooked about another minute. Repeat this step 5 more times, adding an additional 1/4 -1/2 teaspoon beet root powder each time to create a pink ombré effect.   

5.) Whip 1/4 cup Heavy cream or Soy Milk Whipped topping substitute with 1/2 teaspoon beet root powder. Top pancake stack with pink cream and berries. Pour elderberry syrup and maple syrup over top. Enjoy!!
